Salami Sfilsetta is a product made out of fresh and
mature pig meats. It is taken from the part between the culatello and
the fiocchetto, which is lean and slightly sinewy. It is minced to a medium
size with a fair amount of fatty bacon strips which confer to the product
softness, fragrance and sweetness. It must be of a bright red colour when
sliced and the fat must be pure white and well blended with the mixture.
The flavour must be sweet and delicate, with a characteristic fragrance
conditioned by the ageing period. The minced meats are seasoned with salt,
pepper and natural flavourings in accordance with age-old secret recipes,
and then encased in pig gut with its fat partially removed with vinegar
and white wine.
